A Hot Chocolate Mug Cake is for when you really want something sweet but want to do as little work as possible to get it.
For the past two or three weeks, I have had a fast and furious love affair. It’s indulgent, commitment free and makes me incredibly happy. This affair is with mug cakes, specifically this Hot Chocolate Mug Cake.
It started when my roommate and I were having a glorious lazy night in, and after dinner, I started to get hungry for something sweet. As someone who is constantly making desserts, I don’t keep a lot of them in my house. There’s either a 9 inch cake on the counter or nothing. This particular night was a nothing night, but my hankering for sweets would not stop.
I suddenly remembered that mug cakes were a thing, and I made one from a recipe I found online, and while it satisfied my craving for the moment, it wasn’t quite perfect.
I was in luck though, because mug cakes are the perfect dessert to tinker with. It’s just a few ingredients, makes a single serving and has practically no cleanup. My mug cake obsession was born.
For the next week, I tinkered with my recipe, using the giant tin of hot chocolate mix in my pantry as a jumping off point. Some nights I just wanted simple chocolate cake, but other nights I added coconut flakes or raspberry filling, both left over from my Coconut Cake from a few weeks ago.
Finally I got to the recipe below. It’s got a crumb like a proper cake, cooks all the way through but isn’t dry. I could have it every night of the week. I guess my plan to not keep sweets in the house has now backfired, since I can make this Hot Chocolate Mug Cake in minutes. Whoops.
If you don’t have a giant tin of hot chocolate mix in your life, 1) you’re missing out and 2) you can find how to substitute the hot chocolate for cocoa powder in the note underneath the recipe.
Feel free to add whatever toppings or garnishes suit your fancy. I think my favorite so far is coconut flakes. Let me know what yours is below in the comments!
- 4Tbs flour
- 3 Tbs hot chocolate mix
- 3 Tbs sugar
- ¼ tsp baking powder
- pinch of salt
- 1/4 tsp vanilla extract
- 5 Tbs whole milk
- Combine ingredients in a 12 oz. mug and stir well. Add any additional toppings such as coconut flakes or chocolate chips if desired.
- Cook in the microwave for 2 minutes. If making multiple cakes, you’ll get the best result if you nuke the cakes one at a time.
- Dust with powdered sugar and enjoy!
- If you don’t have hot chocolate mix, you can make a chocolate mug cake by upping the sugar to 4 Tbs and adding 1 Tbs of unsweetened cocoa powder. Keep everything else the same.
